Fertility Foods: Lemon & Blueberry Energy Balls

These lemon and blueberry energy balls are the perfect pick me up for the mid-afternoon slump when you are craving something sweet, but without the guilt. They contain no refined sugar, it is really important to keep blood sugar levels stabilised, avoiding spikes for optimum health when trying to conceive as well as throughout pregnancy. These energy balls are rich in protein, made from cashews and chia seeds as well as a good source of dietary fibre. Nuts and seeds are a key fertility food staple because they contain healthy fats which are our bodies need, and are proven to help improve both male and female fertility. The lemon and blueberries give a zesty sweetness and a steady release of energy from their natural sugars. Lemons are praised for their alkalising properties and blueberries are often referred to as a fertility 'superfood' packed to the brim with antioxidants.


Make a big batch of these at the start of the week, store in the fridge and grab as a healthy treat with a cuppa to satisfy cravings.


RECIPE FOR 10 ENERGY BALLS


INGREDIENTS

100g cashew nuts

6 medjool dates

5 blueberries

2 tbsp desiccated coconut

1 tbsp coconut oil, melted

1 tbsp chia seeds

Zest of 1 lemon, grated

Extra desiccated coconut for dusting the energy balls



METHOD

This is a super simple one, whizz up all the ingredients in the blender.

Roll each ball in desiccated coconut, this should make you approximately 10 perfect snack size balls.

Put in the fridge, and allow to cool at least 30 mins before eating.

Store in an airtight container in the fridge, they will keep for around 1 week (not that they last that long in my house!)
