Fertility Foods: Spiralized Courgetti with Turkey Meatballs




This dish is a healthy take on a beef spaghetti bolognese, perfect to make for a cosy night in with your partner. The turkey is a great substitute for beef as it is a very lean source of protein. It is worth eating more turkey because it contains the amino acid, tryptophan, which is converted to serotonin - the 'feel good' hormone - in the brain. The tomatoes are brilliant especially for male fertility because they are a rich source of lycopene, an antioxidant praised for its benefits to sperm quality. The meal is rich in vitamin C, which helps protect the body's cells from free radical damage and oxidative stress, which makes it a very healthy nutrient for sperm and mum to be for a healthy immune system. The courgetti is a great alternative for pasta, once you add toppings to courgetti I totally forget it is not pasta, and its alot healthier for boosting your fertility. Courgettes are rich in vitamins C, A, potassium, folate and fiber all of which are proven to improve digestion, reduce inflammation, boost your immunity, improve thryoid and adrenal functions and support healthy blood circulation. When trying to get pregnant, we want both you and your partner's bodies to be as healthy as possible so nourishing your body with as many nutrients is essential to creating healthy, good quality eggs, sperm and mum to be.



This meal is rich in:

Vitamin A, B vitamins, vitamin C, folate, lycopene, potassium, iron, selenium, tryptophan and fibre.


Ingredients

500g turkey mince

2 eggs

1 white onion

40g sweetcorn

15g spelt flour (or buckwheat flour)

2 garlic cloves

1 tsp chopped thyme

Grated zest of 1 lemon

1 tsp paprika

2 tsp chopped rosemary

1 tbsp coconut oil

2 x 400g cans of chopped tomatoes

4 courgettes

Sea salt and pepper


Method

1. Preheat your oven to 180C.

2. Put the turkey mince in a large mixing bowl with half of the onion, 1.5 crushed garlic cloves, lemon, thyme, paprika, the 2 eggs beaten with salt and pepper - combine with your hands.

3. Add the spelt flour whilst rolling the mixture into your desired meatball size and set aside in the fridge.

4. Heat the coconut oil in a saucepan over a medium heat and sauté the other half of the onion with a pinch of salt for 5 minutes.

5. Add the rosemary and tomatoes, season and simmer for 10 minutes.

6. Once your tomato mixture is cooked, put the meatballs in a roasting tin and pour over the tomato sauce.

7. Bake in the oven for 20 minutes.

8. Whilst the meatballs are cooking, spiralize the courgettes to make the courgetti.

9. Gently heat the courgetti with a little olive oil in a pan for 1-2 minutes (do not over heat as the courgettes can water down quite easily, you just want to heat the courgetti ever so slightly).

10. Serve the courgetti in a bowl with your tomato turkey meatballs on top. You can serve with a sprinkle of grated parmesan cheese if desired.
